Λεξικό γεύσης: γιατί άλλο ζουλιέν κι άλλο… ραμεκέν
Ξέρετε όλοι τι σημαίνει ποσέ, τι είναι το ταρτάρ και τι εννοούν όταν λένε… πίρι-πίρι; Αν όχι, ήρθε η ώρα να μάθετε και να αποκτήσετε λίγη αυτοπεποίθηση στις κουβέντες που έχουν να κάνουν με γεύση, φαγητό και μαγειρική.
Σας πήρε κάποια χρόνια να μάθετε τι ακριβώς είναι το σούσι και να ξεχωρίσετε το νιγκίρι από το μάκι, αλλά δυστυχώς έχετε ακόμη πολλές άγνωστες λέξεις όσον αφορά την κουζίνα διαφόρων χωρών, τον τρόπο μαγειρικής, κάποια υλικά κ.ο.κ. Κι όσο εξπέρ κι αν είστε στο μουσακά και το σουβλάκι, κάποια πράγματα σας διαφεύγουν. Θέλετε να τα μάθετε;
Αν κρουτ: Τύλιγμα και ψήσιμο του κρέατος μέσα σε ζύμη σφολιάτας.
Αντιπάστο: Το ορεκτικό α λα ιταλικά.
Βινεγκρέτ: Δροσερή σάλτσα από λάδι, ξίδι και αλάτι, συχνά με αρωματικά χόρτα.
Γκαράμ Μαζάλα: Ινδικό μείγμα από μπαχαρικά με κόλιανδρο, κουρκουμά, πιπέρι, γαρύφαλλο, κανέλα, κύμινο και πιπερόριζα.
Γουακαμόλε: Ντιπ με βάση το αβοκάντο που παρασκευάζονταν από τους Αζτέκους ήδη από τον 16ο αιώνα.
Εσκαλόπ: Λεπτά κομμάτια κρέατος ή κοτόπουλου που τα κάνουμε με τη βοήθεια του μπάτη, όπως π.χ. το σνίτσελ.
Ζουλιέν: Τρόπος κοπής των λαχανικών, όπως καρότα, κολοκυθάκια, παντζάρια, πράσα, σε μακρόστενα, ισομεγέθη μπαστουνάκια.
Κις Λορέν: Aνοιχτή πίτα-τάρτα με γέμιση κρέμας τυριού, ζαμπόν-μπέικον, λαχανικών κ.ά.
Κονκασέ: Λαχανικά, κυρίως ντομάτες, ξεφλουδισμένες και ξε-σποριασμένες, κομμένες σε χοντρά κομμάτια και σερβιρισμένες μαζί με το χυμό τους.
Κονσομέ: Καθαρός ζωμός κρέατος ή ψαριού που σερβίρεται είτε ζεστός είτε κρύος.
Κονφί: Φρούτα βρασμένα και διατηρημένα μέσα σε ζάχαρη, με λίγο μπράντι ή κρέατα διατηρημένα στο λίπος τους.
Λαρντόν: Λεπτά κομμάτια μπέικον ή λαρδιού που βάζουμε στο κρέας για να μη ξεραίνεται όταν ψήνεται στο φούρνο.
Μανέστρα: Κριθαράκι, αλλά και σούπα της αδριατικής κουζίνας και της Σαντορίνης.
Μαρζιπάν: Γλύκισμα από αλεσμένα αμύγδαλα, ζάχαρη και, όποτε είναι επιθυμητό, χρωστικές και αρωματικές ουσίες.
Μαρζιπάν: Γλύκισμα από αλεσμένα αμύγδαλα, ζάχαρη και, όποτε είναι επιθυμητό, χρωστικές και αρωματικές ουσίες.
Μινεστρόνε: Πηχτή σούπα ιταλικής καταγωγής που φτιάχνεται με λαχανικά, με την προσθήκη ζυμαρικών.
Μπαβαρουάζ: Κρέμα με ζελατίνη αντί για αλεύρι και αρωματισμένη με λικέρ.
Μπεν μαρί: Τρόπος να λιώνουμε πρώτες ύλες όπως π.χ. σοκολάτα, με τον οποίο τα υλικά δεν έρχονται σε απευθείας επαφή με τη θερμότητα, οπότε ζεσταίνονται και λιώνουν σταδιακά. Επάνω σε μια κατσαρόλα που βράζει τοποθετούμε ένα μεταλλικό μπολ με το υλικό που θέλουμε να ζεστάνουμε.
Μπισκ: Σούπα με βάση τα θαλασσινά, όπως ο αστακός, η γαρίδα, η καραβίδα ή το καβούρι.
Μπρεζέ: Μαγειρεμένο κρέας ή πουλερικό σε κατσαρόλα, σε σιγανή φωτιά με την προσθήκη μικρής ποσότητας νερού και λαχανικών, αφού πρώτα έχει τσιγαριστεί.
Παπιγιότ: Γαλλικός όρος που αναφέρεται σε κάθε τροφή που ψήνεται στο φούρνο τυλιγμένη σε λαδόκολλα ή αλουμινόχαρτο.
Πατέ: Μείγμα πολτοποιημένου, μαγειρεμένου κρέατος και λίπους, αλλά και λαχανικών, με μπαχαρικά, που σερβίρεται κρύο ή ζεστό, αν και θεωρείται ότι η νοστιμιά του αναδεικνύεται περισσότερο όταν είναι κρύο.
Πίρι πίρι: Αφρικανική λέξη για το τσίλι και καυτερή σάλτσα τσίλι που χρησιμοποιείται στην πορτογαλική, την αφρικάνικη και τη βραζιλιάνικη κουζίνα.
Ποσέ: Αναφέρεται συνήθως σε αβγά όταν μαγειρεύονται σε νερό που σιγοβράζει, χωρίς το τσόφλι.
Ραμεκέν: Μικρό πυρίμαχο σκεύος, με ή χωρίς χερούλια, για ψήσιμο στον φούρνο.
Ραντίτσιο: Λαχανικό με κόκκινα φύλλα και πικρή/πικάντικη γεύση, που καλλιεργείται στην Ιταλία.
Σαβαρέν: Γνωστό και ως «μπαμπάς», πρόκειται για το γλυκό με την αφράτη ζύμη την οποία περιχύνουμε με σιρόπι από ρούμι και γεμίζουμε με σαντιγύ.
Σαρλότ: Επιδόρπιο που σερβίρεται κρύο ή ζεστό, με σαβαγιάρ και πουρέ φρούτων ή κρέμα.
Σαφράν: Ο γνωστός Κρόκος Κοζάνης, εκλεκτό μπαχαρικό με δυνατό άρωμα, που χρωματίζει τα φαγητά κίτρινα.
Σέλερι: Λαχανικό που ανήκει στην ίδια οικογένεια με το σέλινο, το μαϊντανό και το μάραθο, με λεπτό και τραγανό κοτσάνι που χρησιμοποιείται κυρίως σε σούπες και σαλάτες.
Στιρ φράι (stir fry): Τρόπος μαγειρέματος σε wok, σε καυτό λάδι ή βούτυρο, όπου τηγανίζουμε ελαφρά λαχανικά ή κοτόπουλο κομμένα σε πολύ λεπτές λωρίδες.
Τάπας: Ποικιλία ορεκτικών και σνακ της ισπανικής κουζίνας.
Ταρτάρ: Μπιφτέκι από ωμό φιλέτο μοσχαριού, αναμεμιγμένο με διάφορα υλικά, όπως κρεμμύδι, κάππαρη, σάλτσες και ωμό αυγό. Η σος ταρτάρ είναι σάλτσα μαγιονέζα, με αγγουράκι τουρσί ψιλοκομμένο, κάπαρη, μαϊντανό που συνδυάζεται με ψάρι.
Τορτίγια: Μεξικάνικη λεπτή και μαλακιά πίτα, στις οποίες προσθέτουμε γέμιση φτιάχνοντας τάκος, μπουρίτος κ.λπ.
Τόφου: Προϊόν από το γάλα της σόγιας που παρασκευάζεται παρόμοια με το τυρί.
Φιλέ μινιόν: Κομμάτι από το μικρό μέρος του μοσχαρίσιου φιλέτου.
Φλαν: Μεξικάνικο γλυκό-παραλλαγή της κρέμας καραμελέ, αρωματισμένο με πορτοκάλι
Φοντύ: Λιωμένο μείγμα, συνήθως τυριού ή σοκολάτας σε ειδικό σκεύος, στο οποίο βουτάμε κομμάτια ψωμιού (στο τυρί) ή φρούτα (στη σοκολάτα).
Φριτάτα: Ιταλική ομελέτα εμπλουτισμένη με συστατικά όπως κρεατικά, τυριά, λαχανικά, ζυμαρικά κ.λπ.
Φουά γκρα: Λιπαρό γαστρονομικό έδεσμα από συκώτι χήνας ή πάπιας.
Χούμους: Ντιπ ή spread από πουρέ ρεβιθιού, ταχίνι, ελαιόλαδο, σκόρδο, μαϊντανό.

Sam Smith Bond song splits opinion
Reactions to Sam Smith's theme song for new James Bond film Spectre vary widely following its unveiling earlier on Nick Grimshaw's Radio 1 breakfast show.
Former Bond actor Sir Roger Moore called Writing's On the Wall "very haunting and wonderfully orchestrated".
But other Twitter users have been less complimentary, with one describing it as the "worst Bond theme ever".
BBC entertainment correspondent Colin Paterson said it was "good enough, but not a classic".
The song, whose full version runs for 4 minutes and 38 seconds, begins with the words: "I've been here before / But always hit the floor."
"I've spent a lifetime running, and I always get away," it continues. "But with you I'm feeling something, that makes we want to stay."
"I think it's a song about a man deciding to quit it all for love," Paterson said of the track on BBC Breakfast, comparing its melody to that of Michael Jackson's 1995 single Earth Song.
He also suggested it was far superior to Die Another Day, the much-derided song Madonna contributed to the 2002 Bond film of that name.
Comedian David Schneider was not convinced, greeting the song's release with the words: "The name is Bland. James Bland."
Yet fellow comic Omid Djalili was far more effusive, tweeting the song had left him "in a broken heap."
"If you're not moved by this song you don't have a pulse," wrote Djalili, who had a small role in 1999 Bond film The World is Not Enough.

Smith is the first solo male British act to perform a Bond film's theme song since 1964, when Tom Jones was heard over the opening credits of Thunderball.
The last Bond theme, Adele's song for 2012's Skyfall, peaked at number two in the UK singles chart.
No Bond song has ever reached the top of the UK chart, and opinion is divided whether Smith's track will do so.
Canadian pop star Justin Bieber is currently at number one and is expected to remain there when this week's chart is revealed later on Friday.
Smith himself has said he and his songwriting partner, Jimmy Napes, wanted to create a song that was "timelessly classic".
"This isn't about me, about my life," he said in a promotional video for the song. "I just hope people listen to it and think, 'That's Bond'."
The song's title appears to derive from a scene in Spectre, viewed briefly in the film's trailer, in which James Bond's name is found scrawled upon a wall.

Θρυλικός αμερικανός ηθοποιός της χρυσής εποχής του Χόλιγουντ και αντικείμενο λατρείας εκατομμυρίων γυναικών σε όλο τον κόσμο για τα γαλάζια του μάτια. Η κωμωδία ήταν η τέχνη του, οι αγώνες αυτοκινήτων το πάθος του, η αγάπη του πήγαινε στην οικογένεια και τους φίλους του, η καρδιά και η ψυχή στην υπηρεσία ενός καλύτερου κόσμου.
Ο Πολ Νιούμαν (Paul Newman) γεννήθηκε στο Σέικερς Χάιτ του Οχάιο στις 26 Ιανουαρίου 1925, από πατέρα εβραίο στο θρήσκευμα και μητέρα καθολική, με καταγωγή από τη Σλοβακία. Από μικρή ηλικία έδειξε το ενδιαφέρον του για το θέατρο και με την ενθάρρυνση της μητέρας του συμμετείχε με ένα μικρό ρόλο στην παράσταση Ρομπέν των Δασών, που ανέβηκε στο σχολείο του.
Μετά την αποφοίτησή του από το γυμνάσιο υπηρέτησε τη θητεία του στην αεροπορία και στάλθηκε στο μέτωπο του Ειρηνικού κατά τη διάρκεια του Β'Παγκοσμίου Πολέμου. Μετά την αφυπηρέτησή του σπούδασε ηθοποιός στο Πανεπιστήμιο του Γιέηλ και στη συνέχεια στο περίφημο Actor's Studio του Λι Στράσμπεργκ, όπου διδάχθηκε την τέχνη της «μεθόδου».
Ξεκίνησε την κινηματογραφική καριέρα του στα μέσα της δεκαετίας του '50 και γρήγορα αναδείχθηκε σε πρωταγωνιστή. Συμμετείχε σε περισσότερες από 50 ταινίες και οι ρόλοι που ερμήνευσε, στις ταινίες Κεντρί και Δύο Ληστές του Τζορτζ Ρόι Χιλ, πλάι στον Ρόμπερτ Ρέντφορντ, άφησαν εποχή.
Προτάθηκε εννέα φορές για Όσκαρ καλύτερης ανδρικής ερμηνείας, κερδίζοντας τελικά ένα, το 1987, για τον ρόλο του στο Χρώμα του Χρήματος, με συμπρωταγωνιστή τον ανερχόμενο Τομ Κρουζ. Το 1986 η Αμερικανική Ακαδημία Κινηματογράφου του απένειμε τιμητικό Όσκαρ για την προσφορά του στην έβδομη τέχνη.

Ο μεγάλος του έρωτας υπήρξε η συμπρωταγωνίστριά του Τζόαν Γούντγουορντ. Γνωρίστηκαν στα γυρίσματα της ταινίας Μακρύ, ζεστό καλοκαίρι το 1958 και δεν τους χώρισε παρά μόνο ο θάνατος. «Έχω φιλέτο στο σπίτι, γιατί να πάω έξω για χάμπουργκερ;» είχε πει χαριτολογώντας στο περιοδικό Playboy, όταν ρωτήθηκε εάν του πέρασε ποτέ από το μυαλό να απατήσει τη σύζυγό του. Με την Τζόαν Γουόντγουορντ απέκτησε τρεις κόρες, ενώ από τον πρώτο του γάμο με την Τζάκι Γουίτ, ένα γιο και δύο κόρες.
Το 1990 το περιοδικό People τον ανέδειξε ως έναν από τους 50 ωραιότερους άνδρες του κόσμου, ενώ το 1995 το βρετανικό περιοδικό Empire τον είχε επιλέξει ανάμεσα στους 100 πιο σέξι ηθοποιούς στην ιστορία του κινηματογράφου.
Πολιτικοποιημένος ηθοποιός, έπαιξε σημαντικό ρόλο στο κίνημα για τα πολιτικά δικαιώματα στις ΗΠΑ. Συμμετείχε σε προεκλογικές εκστρατείες του Δημοκρατικού Κόμματος, καθώς και σε διασκέψεις για τον πυρηνικό αφοπλισμό.
Τη δεκαετία του '80 κυκλοφόρησε στην αγορά μια σειρά προϊόντων διατροφής με το όνομά του, τα έσοδα από τα οποία τα διέθετε για φιλανθρωπικούς σκοπούς. Μέχρι τον Μάιο του 2007, τα ποσά που είχε διαθέσει σε αγαθοεργίες ξεπερνούσαν τα 200 εκατομμύρια δολάρια.
Είχε πάθος για την ταχύτητα και τα γρήγορα αυτοκίνητα. Έλαβε μέρος σε πολλούς αγώνες, με αποκορύφωμα τη δεύτερη θέση που κατέλαβε το 1979 στο ονομαστό ράλι των 24ων Ωρών του Λεμάν.
Τον Μάιο του 2008 ο Πολ Νιούμαν ανακοίνωσε ότι για λόγους υγείας αποσύρεται από τα φώτα της δημοσιότητας και πως τελικά δεν θα σκηνοθετούσε τη θεατρική εκδοχή της νουβέλας του Τζον Στάινμπεκ Άνθρωποι και Ποντίκια. Δεινός καπνιστής, πέθανε στη φάρμα του, κοντά στο Γουέστπορτ του Κονέκτικατ, στις 26 Σεπτεμβρίου 2008, χτυπημένος από καρκίνο του πνεύμονα

Ελληνικής καταγωγής σκηνοθέτης και ηθοποιός, με σημαντική καριέρα στο Χόλιγουντ. Ο Ελία Καζάν (Elia Kazan) γεννήθηκε στις 7 Σεπτεμβρίου 1909 στην Κωνσταντινούπολη και το πραγματικό όνομά του ήταν Ηλίας Καζαντζόγλου. Σε ηλικία τεσσάρων ετών μετανάστευσε με τους γονείς του, αρχικώς στη Γερμανία και στη συνέχεια στις ΗΠΑ.
Αποφοίτησε από το τμήμα υποκριτικής του πανεπιστημίου Γέιλ και συνέχισε τις σπουδές του στο Γκρουπ Θίατερ του Λι Στράσμπεργκ. Η πλούσια καριέρα του άρχισε στη δεκαετία του ’30 και το αστέρι του έλαμψε με μεγάλα θεατρικά έργα στο Μπρόντγουεϊ και κινηματογραφικές επιτυχίες στο Χόλιγουντ.

Στα ναυπηγεία Fincantieri στην Ιταλία βρίσκεται σε εξέλιξη η κατασκευή του κρουαζιερόπλοιου Seven Seas Explorer. Προς το παρόν μπορεί κανείς να δει τον σκελετό του σκάφους και τους γερανούς που μεταφέρουν υλικά.
Σε λιγότερο από ένα χρόνο όμως θα έχει μεταμορφωθεί σε έναν πλωτό γίγαντα 56.000 τόνων- και η εταιρεία έδωσε στη δημοσιότητα εικόνες για το πώς θα δείχνουν τα διάφορα σημεία του πλοίου.
Το τέταρτο και πιο πολυτελές πλοίο του στόλου της Regent αναμένεται να κάνει το παρθενικό του ταξίδι στις 20 Ιουλίου 2016 αποπλέοντας από το Μόντε Κάρλο προς τη Βενετία με 750 επιβάτες και πλήρωμα 542 ατόμων.
